Persian Flat-Bread Sandwiches with Cucumber and Mint

Ingredients:

• 1 piece of Persian flat-bread - about 18-20 inches (these are very long, flat and bendable breads)
• 16-24 oz Soft Kefir Cheese (like a combo of Cream Cheese and Yogurt)
• 1-2 thinly sliced cucumbers
• About ¼ cup of fresh chopped Mint Leaves
• About ¼ cup chopped fresh chives or scallions (green onions)
• About ¼ cup of chopped walnuts
• 1-2 Cucumbers depending on size, sliced thin
• Large Jar of Roasted red peppers, sliced (16-24 oz)
• Use more or less ingredients based on the amount of sandwiches you want and adjust the mint, etc. to your taste

Preparation:

• Thinly slice the cucumbers
• Chop the mint leaves into small pieces
• Chop the walnuts in small pieces if not already in pieces
• Chop the chives or green onions into small pieces
• Mix all the ingredients above in the cream cheese
• Spread the mixture on the flat bread
• Lay slices of roasted red pepper on top of the mixture
• Roll bread up lengthwise into a tube
• Use toothpicks to hold it together
• Slice into 1-2 inch rounds and serve

You can also use this mixture on other types of breads, cut off the crusts and cut into small finger sandwiches. The flavors are very light and tasty and are great with both red and white wines. Delicious!
